These elegant mini tartlets combine the floral notes of Gaillardia with zesty citrus and smooth honey for a sophisticated dessert or tea-time treat.
Ingredients:
For the tart shells:
- 1 cup all-purpose flour
- ½ cup cold butter, cubed
- 2 tbsp powdered sugar
- 1–2 tbsp cold water
For the filling:

- 2 tbsp honey
- 1 tsp orange zest
- ½ tsp lemon juice
Topping:
- 6–8 fresh Gaillardia petals (rinsed and patted dry)

Instructions:
- Prepare the tart shells:
In a bowl, cut butter into flour and sugar until crumbly. Add cold water to form dough. Roll out and press into mini tart pans. Bake at 180°C (350°F) for 12–15 minutes until golden. Cool completely. - Make the filling:
