Ingredients:
- 2 stalks Celery Farm Lemongrass, bruised and chopped
- 1 lb chicken thighs or breast, thinly sliced
- 1 can (14 oz) coconut milk
- 3 cups chicken broth
- 3 kaffir lime leaves (optional)
- 2-inch piece of galangal or ginger, sliced
- 1–2 Thai chilies (optional)
- 1 cup mushrooms, sliced
- 1 tbsp fish sauce
- Juice of 1 lime
- Fresh cilantro and chili oil for garnish
Instructions:
- In a pot, combine chicken broth, lemongrass, galangal, and lime leaves. Simmer for 10 minutes to infuse.
