Recipe: Caramelized King Oyster Mushroom “Scallops”
A vegan, umami-rich dish that mimics the texture and presentation of sea scallops. Perfect as a main or appetizer.

Ingredients:
- 2 large King Oyster mushrooms
- 1 tbsp olive oil
- 1 tbsp vegan butter or regular butter
- 2 cloves garlic, minced
- 1 tbsp soy sauce or tamari
- 1 tsp lemon juice
- Salt & pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Slice the mushroom stems into 1-inch thick rounds (like scallops).
- Use a knife to score a shallow “X” on each flat side of the round to help with caramelization.
- Heat olive oil in a skillet over medium heat. Sear the mushroom rounds flat-side down for 3–4 minutes until golden brown. Flip and repeat.
- Add butter, garlic, soy sauce, and lemon juice. Baste the mushrooms with the sauce for another 1–2 minutes.
- Season with salt and pepper, garnish with parsley, and serve warm with rice, quinoa, or on toast.
